Ingredients
- - Mori-Nu Silken Firm Tofu
- 1 piece Yellow Bell Pepper
- 1 Kg Red Onion 1kg
- 830G Turkish Tomato Paste, 830G
- 380G Fage Fruits Coconut
- 1 L Olive Oil – Organic
- - PLJ Lemon Juice Original Sharp 500ml
- 1 Kg Laila Basmati Rice
- 100G Tata Sampann Garam Masala Tata Sampann Garam Masala, 45g
- - La Chinata Sweet Smoked Paprika
- 400 g Trs Turmeric Powder 400G
- - Mccormick Cumin Powder
- 450G Rice Flour, 450G
Instructions
- 1. Rinse the basmati rice and soak it in water for 15 minutes before cooking.
- 2. Cut the tofu into 1-inch cubes and marinate with coconut yogurt, garam masala, turmeric, smoked paprika, cumin, and salt for 10 minutes.
- 3. Heat olive oil in a pan and sear the marinated tofu until golden and slightly crisp on all sides.
- 4. Dice the red bell pepper, zucchini, and onion into bite-sized pieces and sauté them in the same pan until tender.
- 5. In a separate pot, cook the basmati rice with 300ml of water and a pinch of salt until fluffy.
- 6. Add tomato paste to the sautéed vegetables and stir well to combine the flavors evenly.
- 7. Sprinkle rice flour over the tofu and vegetables to enhance the texture and coat them lightly.
- 8. Layer the cooked basmati rice in serving bowls and top with the smoky tandoori tofu and vegetable mix.
- 9. Garnish with freshly chopped cilantro and a drizzle of lemon juice for added freshness.
