Ingredients

  • 500G White Pearl Italian Pudding Rice 500g
  • 1 Piece Red Bell Pepper, 1pcs | Gopuff
  • 1 Bunch Spinach Fresh 1 Bunch
  • 100 G Jumbo Garlic 100g
  • 250 ml Critida Lemon Infused Olive Oil 250Ml
  • NaN Unsweetened Almond Beverage
  • 5 l White Wine Vinegar - 5Lt - Marco Alimentari
  • - Silver Spoon Granulated Sugar
  • 1 Kg Yutaka Wasabi Powder, 1Kg

Instructions

  1. 1. Cook 1 cup of white rice according to the package instructions. Once cooked, set aside and keep warm.
  2. 2. Roast 1 red bell pepper by holding it over an open flame with tongs until the skin blackens, or by placing it skin-side up under a broiler until charred. Let it cool, then peel off the skin and chop into bite-sized pieces. Set aside.
  3. 3. Heat 1 tablespoon of olive oil in a pan over medium heat. Add 2 cups of fresh spinach and 1 clove of minced garlic. Sauté until the spinach wilts, then stir in 1 tablespoon of white wine vinegar. Remove from heat and pat the spinach dry with a towel to remove excess moisture. Set aside.
  4. 4. Combine the cooked rice, roasted red pepper pieces, and sautéed spinach in a bowl. Fluff the mixture with a fork to create a colorful pilaf. Keep warm on a low burner, stirring occasionally to prevent sticking.
  5. 5. In a small saucepan, pour 1/4 cup of almond beverage. Gradually whisk in 2 tablespoons of sugar and 2 tablespoons of wasabi powder. Heat gently over low heat, stirring constantly, until the sugar and wasabi dissolve. Be careful not to let the sauce boil or separate. Keep warm.
  6. 6. Heat a cast-iron skillet over high heat. Add a small amount of olive oil if desired. Sear slices of roasted red bell pepper for 1-2 minutes per side, or until heated through.
  7. 7. To serve, place a portion of the spinach and red pepper rice pilaf on each plate. Top with the seared red bell pepper and drizzle the wasabi-coconut sauce over the pepper. Garnish with shredded coconut or parsley if desired.
