Instructions
- 1. Heat 1/3 cup olive oil in a large skillet over medium heat. Add 6 chopped scallions, 1 diced pepper, 2 sliced leeks, 1 tablespoon minced garlic, and 1 diced onion. Sauté until softened, about 5 minutes.
- 2. Stir in 2 bay leaves, 1 teaspoon rosemary, 1 teaspoon thyme, 1 pound diced tomatoes, 1 pound tomato sauce, and 1 pound tomato puree. Add 2 cups red wine, salt, and pepper to taste. Bring the mixture to a boil.
- 3. Reduce the heat to low and let the sauce simmer for 1 hour, stirring occasionally to prevent sticking.
- 4. Add 2 king prawns, 18 mussels, 1/2 pound shrimp, 1/2 pound scallops, and 1 pound hake to the skillet. Cover and cook for 10-15 minutes, or until the seafood is fully cooked and the mussels have opened.
- 5. Remove the bay leaves and garnish the stew with 1/3 cup chopped parsley. Serve hot with crusty bread or over rice for a complete meal.
