- 850G Riseria Campanini 3 Cereals Rice, 850G
- 300G The Jolly Hog Smoked Black Treacle Bacon
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1 Piece Red Bell Pepper, 1pcs | Gopuff
- Pack Tray Of 30 Medium Free Range Eggs
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- - Cooks & Co Sliced Mushrooms
- 500G Aunt Bessie'S Maple & Thyme Glazed Carrots
Instructions
- 1. Rinse 2 cups of rice thoroughly and cook it in 4 cups of water until tender. Set aside to cool slightly.
- 2. Heat a large skillet over medium heat and add 1 1/2 lb of cubed bacon. Fry until crisp, then remove and set aside, leaving the rendered fat in the skillet.
- 3. Add 2 diced onions, 2 diced bell peppers, and 2 diced carrots to the skillet. Stir-fry for 5-7 minutes until softened.
- 4. Drain 2 cans of mushrooms and add them to the skillet. Cook for another 3 minutes, stirring occasionally.
- 5. Push the vegetables to one side of the skillet and crack 1 egg into the empty space. Scramble the egg until fully cooked, then mix it into the vegetables.
- 6. Add the cooked rice to the skillet along with the crispy bacon. Stir everything together and cook for 3-5 minutes until heated through.
- 7. Taste and adjust seasoning if needed. Serve hot as a complete dinner meal.
