- 12 Per Pack Daylesford Organic Mixed Weight Eggs
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- - Nearly Naked Veg Basil 100g
- 1.5 Kg Best In Plain Flour 1.5 Kg
- 113G Royal Baking Powder Tin, 113G
- - Silver Spoon Granulated Sugar
- 70G Mill & Mortar Citrus Salt Flakes, 70G
- - Ktc Vegetable Oil
Instructions
- 1. In a large mixing bowl, combine 1 cup of flour, 1 teaspoon of baking powder, 1 teaspoon of sugar, 3/4 teaspoon of salt, 1 tablespoon of finely chopped onion, 1 tablespoon of chopped parsley, and 2 tablespoons of chopped fresh basil.
- 2. Add 1 beaten egg and 28 ounces of finely chopped or crushed tomatoes to the dry ingredients. Mix gently until just combined; do not overmix.
- 3. Heat 3/4 inch of oil in a deep skillet to 360°F (180°C).
- 4. Drop the batter by tablespoonfuls into the hot oil, frying in batches. Cook each fritter for about 2-3 minutes per side, or until golden brown, turning once.
- 5. Remove the fritters from the oil and drain on paper towels to remove excess grease.
- 6. Serve warm as a side dish or appetizer. These fritters can be kept warm in the oven at a low temperature for up to 2 hours.
