- 1 Bunch Spinach Fresh 1 Bunch
- 158G Savoury Mushrooms, 158G
- 450G Rice Flour, 450G
- NaN Overherd Oat Milk Powder
- 1 L Olive Oil – Organic
- 100 G Jumbo Garlic 100g
- 1 Kg Red Onion 1kg
- - Greenfields Black Peppercorns
- - Natco Ground Nutmeg
Instructions
- 1. Preheat oven to 180°C and lightly grease a tartlet tray with olive oil.
- 2. Wash and finely chop spinach, mushrooms, onion, and garlic, keeping them separate.
- 3. Heat olive oil in a pan and sauté garlic and onion until translucent for about 3 minutes.
- 4. Add mushrooms to the pan and cook until they release water and start to brown slightly.
- 5. Stir in spinach and cook until wilted, seasoning with salt, pepper, and nutmeg.
- 6. In a bowl, mix rice flour with oat milk to form a smooth batter for the tartlet shells.
- 7. Pour batter into the tartlet tray, filling each slot halfway, then spoon in the spinach-mushroom mixture.
- 8. Bake the tartlets in the oven for 20-25 minutes, checking until the edges turn golden brown.
- 9. Remove from the oven and let the tartlets cool for 5 minutes before removing from the tray.
- 10. Serve warm or at room temperature with a drizzle of olive oil for added flavor.
