- 2 X 320G Jus-Rol Shortcrust Sheets Frozen
- 395G D'Aucy Chopped Spinach
- 60G Mill & Mortar Organic Salt Of Hearts, 60G
Instructions
- 1. Preheat your oven to 450°F (230°C).
- 2. Cook 1 cup of spinach in a pan over medium heat until wilted, then drain thoroughly by squeezing out excess moisture.
- 3. In a large bowl, whisk together 5 eggs, 1 cup of shredded cheddar cheese, 1/4 cup of chopped green onion, 2 tablespoons of chopped parsley, and 1/2 teaspoon of salt until well combined.
- 4. Stir the drained spinach into the egg and cheese mixture until evenly distributed.
- 5. Pour the mixture into a slightly pre-baked shortcrust pastry, spreading it out evenly.
- 6. Slice 1 tomato into thin rounds and arrange them on top of the pie. Sprinkle 1/2 cup of grated Parmesan cheese over the top.
