Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Wash the acorn squash, apples, and onion thoroughly. Slice the acorn squash into rings, core and slice the apples into rings, and cut the onion into rings.
- 3. In a large skillet, melt 1/4 cup of light butter over medium heat. Add the onion rings and sauté for 5 minutes until softened.
- 4. Arrange the acorn squash rings in a single layer in an ungreased rectangular baking dish (13 x 9 x 2-inch).
- 5. Layer the sautéed onion rings and apple slices over the squash. Sprinkle with 1/4 teaspoon of salt, 1/8 teaspoon of black pepper, 1 teaspoon of ginger, and 1 1/2 teaspoons of pumpkin pie spice.
- 6. Drizzle 3 tablespoons of honey evenly over the layered ingredients.
- 7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the squash is tender and lightly caramelized.
- 8. Serve warm as a delightful main course or side dish.
