- 1kg 1kg Green Pepper
- 1 stick Organic Celery Stick

- - Biona Organic Risotto Brown Rice
- 60G Terre Exotique Cheeselovers Pepper, 60G
- - Knorr Stock Cubes Vegetable
- 4.5 Kg Packington Free Range Cockerel
- 1 Kg Peaches Kilo
- 60G Mill & Mortar Organic Salt Of Hearts, 60G
Instructions
- 1. Preheat the oven to 350°F (175°C).
- 2. In a medium saucepan, melt 1/4 cup butter over medium heat.
- 3. Add 1 chopped onion, 1 diced green pepper, 1 cup chopped celery, and 1/4 pound sliced mushrooms to the saucepan. Cover and cook for 5 minutes, stirring occasionally, until the vegetables are tender.
- 4. Stir in 2 cups water and 1 vegetable stock cube. Heat the mixture until it begins to boil.
- 5. Remove the saucepan from heat and stir in 1 cup brown rice, 1 teaspoon ground, 1/2 teaspoon salt, and a pinch of pepper.
- 6. Transfer the mixture to a greased 2-quart casserole dish and cover it tightly with a lid or foil.
- 7. Bake the casserole in the preheated oven for 30 minutes, or until the rice is tender and the liquid is absorbed.
- 8. Stir in 1 cup of diced peaches into the casserole.
- 9. Return the casserole to the oven and bake for an additional 15 minutes, or until the fruit is heated through.
- 10. Remove from the oven and let it rest for 5 minutes before serving.
