Instructions

  1. 1. Preheat your air fryer to 180°C for 5 minutes while preparing the ingredients.
  2. 2. Rinse the quinoa under cold water and cook it in a pot with 300 ml of water until soft, about 15 minutes.
  3. 3. Slice the tops off the bell peppers and remove the seeds and membranes inside.
  4. 4. Finely chop the parsley, coriander, cherry tomatoes, and red onion, then mix them in a bowl.
  5. 5. Mince the garlic cloves and sauté them lightly in olive oil until fragrant, about 2 minutes.
  6. 6. Add the cooked quinoa to the vegetable mixture along with the sautéed garlic, cumin, paprika, salt, and pepper.
  7. 7. Drizzle lemon juice into the quinoa mixture and stir well to combine all the flavors.
