Instructions

  1. 1. Heat 1/4 cup oil in a 4-quart sauce pot over medium heat. Add 1 diced onion and 2 minced garlic cloves, sautéing until soft and fragrant, about 5 minutes.
  2. 2. Add 2 lb of cubed pork to the pot and cook until browned on all sides, about 8-10 minutes.
  3. 3. Drain the liquid from 2 cans of green beans into the pot with the pork. Add 4 cups of water, 1 diced tomato, and 12 oz of tomato paste. Stir well to combine.
  4. 4. Season the mixture with 1 tsp salt and additional spices to taste. Bring the pot to a boil, then reduce the heat to medium and simmer until the pork is almost cooked through, about 25 minutes.
  5. 5. Add the drained green beans to the pot and continue to cook for another 15-20 minutes, stirring occasionally, until the sauce thickens to a pouring consistency.
  6. 6. Serve the pork and green bean mixture over cooked rice on individual plates for a complete meal.
