Instructions
- 1. Preheat your oven to 200°F (93°C) to keep the patties warm while cooking.
- 2. In a large mixing bowl, combine 3/4 cup flour, 1 tablespoon cornmeal, 1 teaspoon sugar, 2 teaspoons baking powder, 2 teaspoons rosemary, 2 tablespoons chopped parsley, 1/2 teaspoon pepper, and a pinch of salt.
- 3. Gradually add 3/4 cup milk to the dry ingredients, stirring until a thick batter forms.
- 4. Fold in 1/2 cup finely chopped onion, ensuring it is evenly distributed throughout the batter.
- 5. Heat a skillet over medium heat and add enough peanut oil to coat the bottom of the pan.
- 6. Drop spoonfuls of the batter into the hot oil, flattening each one slightly with the back of a spoon to form patties.
- 7. Cook the patties for 2-3 minutes on each side, or until golden brown and crisp.
- 8. Transfer the cooked patties to a baking sheet and place them in the preheated oven to keep warm while you finish cooking the remaining batter.
