Instructions
- 1. In a large bowl, combine 1 1/2 lb ground beef, 1 egg, 3/4 cup bread crumbs, 1/4 cup finely chopped onion, and 1/2 tsp salt. Mix well until evenly combined.
- 2. Shape the mixture into 1-inch meatballs and set aside.
- 3. Heat 1 tbsp oil in a large pot over medium heat. Add the meatballs and brown them on all sides, about 5 minutes. Remove the meatballs and set aside.
- 4. In the same pot, add the remaining 1/2 cup finely chopped onion and sauté until softened, about 3 minutes.
- 5. Drain off any excess oil from the pot. Add 1 cup vegetable broth, 2 cups tomato sauce, 1/2 tsp thyme, 1/4 tsp pepper, and 2 cups frozen mixed vegetables. Stir to combine.
- 6. Cover the pot and simmer the mixture for 10 minutes over medium-low heat.
- 7. Return the browned meatballs to the pot and cook for an additional 10-15 minutes, or until the meatballs are fully cooked and the vegetables are tender.
- 8. Serve the stew hot, garnished with fresh thyme if desired.
