Instructions

  1. 1. Rinse the basmati rice thoroughly under cold water to remove excess starch, then soak for 15 minutes.
  2. 2. Dice the onion and garlic finely, and chop the chayote squash, carrots, and cucumber into bite-sized pieces.
  3. 3. Heat olive oil in a large skillet over medium heat, then sauté the onion and garlic until fragrant and translucent.
  4. 4. Add the diced chayote squash and carrots to the skillet, stirring occasionally, and cook for 5 minutes.
