- 1. Rinse the basmati rice thoroughly under cold water to remove excess starch, then soak for 15 minutes.
- 2. Dice the onion and garlic finely, and chop the chayote squash, carrots, and cucumber into bite-sized pieces.
- 3. Heat olive oil in a large skillet over medium heat, then sauté the onion and garlic until fragrant and translucent.
- 4. Add the diced chayote squash and carrots to the skillet, stirring occasionally, and cook for 5 minutes.
