Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Heat 1 tablespoon of oil in a large skillet over medium heat. Add 1 1/2 pounds of ground meat, 1 cup of chopped onion, and 1 minced clove of garlic. Cook until the meat is browned and fully cooked, breaking it up as it cooks.
- 3. Stir in 2 cups of chopped celery and 1 can of mushroom sauce. Cook for 2-3 minutes until the celery begins to soften.
- 4. In a separate small pot, cook mixed vegetables in 1/2 cup of water for 5 minutes. Drain and add the vegetables to the meat mixture.
- 5. Stir in 2 cups of cooked quinoa, 2 tablespoons of soy sauce, 2 teaspoons of salt, and 1/2 teaspoon of pepper. Mix well to combine all ingredients.
- 6. Transfer the mixture into a greased 2 1/2-quart casserole dish. Cover the dish with a lid or aluminum foil and bake for 25 minutes.
- 7. Remove the cover and evenly sprinkle 1 package of egg noodles over the top.
- 8. Return the casserole to the oven and bake uncovered for an additional 5 minutes until the noodles are crispy.
