Ingredients
- - Cofresh Whole Green Chilli 350g
- - Rajah Jeera Whole Cumin Seeds
- - Schwartz Coriander Leaf Jar
- 1kg 1kg Green Pepper
- 1.5 Kg Natco Rice Flour, 1.5Kg
- 1 L Crisp N Dry Oil
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Rinse 1/2 cup of tapioca pearls thoroughly until the water runs clear. Boil them in 1 cup of water for 10-15 minutes or until they become soft and translucent. Drain and let them cool completely.
- 2. In a mixing bowl, combine the boiled tapioca pearls, 1/2 cup of rice flour, 1/4 cup of yogurt, and 1/4 cup of water. Mix well to form a thick batter. Let the batter rest for 15 minutes.
- 3. Finely chop 1 green chilli, 1/4 cup of coriander leaves, and 1/4 cup of green pepper. Add them to the batter along with 1/4 tsp of cumin seeds, salt to taste, and mix thoroughly.
- 4. Heat a non-stick pan or skillet on medium heat and lightly grease it with cooking oil. Pour a ladleful of the batter onto the pan and gently spread it into a small, thick circle.
- 5. Drizzle a few drops of cooking oil around the edges of the uttapam. Cook on medium flame for 2-3 minutes or until the bottom turns golden brown.
- 6. Flip the uttapam carefully and cook the other side for another 2-3 minutes until fully cooked and golden.
- 7. Repeat the process with the remaining batter. Serve hot with coconut chutney or green chutney.
