Instructions
- 1. Rinse the barley under cold water and set aside to drain thoroughly.
- 2. Peel and finely chop the garlic. Slice the carrots, radish, and chayote squash into thin pieces.
- 3. Heat olive oil in a large pan over medium heat and sauté the garlic until fragrant, about 1 minute.
- 4. Add the sliced mushrooms to the pan and cook for 5 minutes, stirring occasionally until softened.
- 5. Stir in the carrots, radish, and chayote squash, cooking for another 3-4 minutes to slightly tenderize.
- 6. Sprinkle the Greenfields Berbere Spice Blend and black pepper over the vegetables, mixing well to coat evenly.
- 7. Add the rinsed barley to the pan and stir to combine with the vegetables.
- 8. Pour the vegetable stock into the pan, bring to a boil, then reduce heat to low and cover. Simmer for 20-25 minutes, stirring occasionally.
