Instructions

  1. 1. Preheat the oven to 200°C (392°F) to warm the tostadas later. Meanwhile, season the chicken breasts with smoked paprika, ground cumin, chili powder, salt, and black pepper.
  2. 2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the seasoned chicken breasts for 6-8 minutes per side until fully cooked (internal temperature of 75°C/165°F). Remove from the skillet and shred the chicken using two forks.
  3. 3. In a small saucepan, gently heat the refried beans over low heat until warm and creamy, stirring occasionally. Set aside.
  4. 4. In a medium bowl, combine the diced red and green bell peppers with the sweetcorn kernels. Add a tablespoon of olive oil, lime juice, and a pinch of salt to create a fresh salsa.
