Ingredients

  • - Yutaka White Miso Paste
  • - Ginger - 100g
  • 50G Black Garlic Cloves, 50G
  • 1 Kg Carrots - 1kg
  • 450G Pack'D Organic Broccoli Florets
  • 1 Bunch Spring Onions 1 Bunch
  • - Forest Whole Foods Organic White Quinoa
  • - Kikkoman Soy Sauce
  • 120 Ml Lee Kee Seasoned Rice Vinegar 120ml
  • 160 Ml Cj Bibigo Sesame Oil
  • 400G Whole Chickpeas In Water

Instructions

  1. 1. Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
  2. 2. In a bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, and cornstarch with water until smooth.
  3. 3. Coat the tofu cubes evenly with the miso mixture and set aside for 10 minutes to marinate.
  4. 4. Heat a non-stick pan over medium heat and sear the marinated tofu until golden brown on all sides, about 5 minutes.
  5. 5. Grate the ginger and mince the garlic finely; set aside for the stir-fry.
  6. 6. In another pan, heat sesame oil and sauté ginger and garlic for 1 minute until fragrant.
  7. 7. Add the carrots and broccoli to the pan, stir-frying for 5 minutes until tender-crisp.
