- - Ginger - 100g
- 50G Black Garlic Cloves, 50G
- 1 Kg Carrots - 1kg
- 450G Pack'D Organic Broccoli Florets
- 1 Bunch Spring Onions 1 Bunch
- - Forest Whole Foods Organic White Quinoa
- - Kikkoman Soy Sauce
- 120 Ml Lee Kee Seasoned Rice Vinegar 120ml
- 160 Ml Cj Bibigo Sesame Oil
- 400G Whole Chickpeas In Water
Instructions
- 1. Press the tofu for 15 minutes to remove excess moisture, then cut into bite-sized cubes.
- 2. In a bowl, whisk together miso paste, soy sauce, rice vinegar, sesame oil, and cornstarch with water until smooth.
- 3. Coat the tofu cubes evenly with the miso mixture and set aside for 10 minutes to marinate.
- 4. Heat a non-stick pan over medium heat and sear the marinated tofu until golden brown on all sides, about 5 minutes.
- 5. Grate the ginger and mince the garlic finely; set aside for the stir-fry.
- 6. In another pan, heat sesame oil and sauté ginger and garlic for 1 minute until fragrant.
- 7. Add the carrots and broccoli to the pan, stir-frying for 5 minutes until tender-crisp.
- 8. Toss in the spring onions and cooked quinoa, cooking for another 2 minutes to combine flavors.
- 9. Plate the sesame ginger vegetables alongside the miso-glazed tofu cubes.
- 10. Garnish with toasted sesame seeds for added texture and aroma.
