- - Mowi Scottish Salmon Fillets
- - Schwartz Sesame Seeds
- - Broccoli 750g
- - Ashoka Carrot Pickle 500 G
- 1 Bunch Spring Onions 1 Bunch
- - Ginger - 100g
- 1 Piece Lemon Grass Bwfo
- 500 Ml Sesame Oil 10 Litres
- 1 piece Yellow Bell Pepper
- 1 L Olive Oil – Organic
- - Yutaka White Miso Paste
- - Kikkoman Soy Sauce
- 450G Rice Flour, 450G
- 400G Whole Chickpeas In Water
Instructions
- 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
- 2. In a small bowl, mix miso paste, soy sauce, honey, and sesame oil until smooth.
- 3. Brush the miso glaze evenly over the salmon fillets and place them on the baking tray.
- 4. Bake salmon for 12-15 minutes until cooked through and slightly caramelized.
- 5. While salmon is baking, rinse rice and cook it in a pot with 300ml water until tender.
- 6. Toast sesame seeds in a dry pan for 2 minutes until aromatic, then mix into the cooked rice.
- 7. Heat olive oil in a large pan or wok over medium-high heat for the vegetables.
- 8. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant.
- 9. Add broccoli, carrot, and bell pepper to the pan, tossing for 5-6 minutes until tender-crisp.
- 10. Stir in sliced spring onions and a squeeze of lemon juice for brightness.
- 11. Plate the sesame rice, arrange stir-fried vegetables alongside, and top with the baked salmon.
- 12. Garnish with an extra sprinkle of sesame seeds and serve immediately.
