Ingredients

  • 150G Honey Mustard And Dill Gourmet Spread, 150G
  • - Mowi Scottish Salmon Fillets
  • - Schwartz Sesame Seeds
  • - Broccoli 750g
  • - Ashoka Carrot Pickle 500 G
  • 1 Bunch Spring Onions 1 Bunch
  • - Ginger - 100g
  • 1 Piece Lemon Grass Bwfo
  • 500 Ml Sesame Oil 10 Litres
  • 1 piece Yellow Bell Pepper
  • 1 L Olive Oil – Organic
  • - Yutaka White Miso Paste
  • - Kikkoman Soy Sauce
  • 450G Rice Flour, 450G
  • 400G Whole Chickpeas In Water

Instructions

  1. 1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. 2. In a small bowl, mix miso paste, soy sauce, honey, and sesame oil until smooth.
  3. 3. Brush the miso glaze evenly over the salmon fillets and place them on the baking tray.
  4. 4. Bake salmon for 12-15 minutes until cooked through and slightly caramelized.
  5. 5. While salmon is baking, rinse rice and cook it in a pot with 300ml water until tender.
  6. 6. Toast sesame seeds in a dry pan for 2 minutes until aromatic, then mix into the cooked rice.
  7. 7. Heat olive oil in a large pan or wok over medium-high heat for the vegetables.
  8. 8. Add minced garlic and ginger, stir-frying for 30 seconds until fragrant.
  9. 9. Add broccoli, carrot, and bell pepper to the pan, tossing for 5-6 minutes until tender-crisp.
  10. 10. Stir in sliced spring onions and a squeeze of lemon juice for brightness.
  11. 11. Plate the sesame rice, arrange stir-fried vegetables alongside, and top with the baked salmon.
  12. 12. Garnish with an extra sprinkle of sesame seeds and serve immediately.
