Ingredients
- 1 Bunch Spinach Fresh 1 Bunch
- 1 Kg Tomatoes 1kg
- NaN Aroy-D Coconut Milk
- 1 L Olive Oil – Organic
- - Sunita Lemon Juice Organic
- 500 G Fresh Vine Tomato 500g
- 100 G Trs Ground Cumin Jeera Powder
- 100 G Natco Paprika Powder
- 400 g Trs Turmeric Powder 400G
- 750 G Top-Op Table Salt Drums
- - Natco Black Pepper Whole
- 400G Whole Chickpeas In Water
Instructions
- 1. Wash and roughly chop the spinach leaves, then set them aside.
- 2. Heat olive oil in a large pan over medium heat for 1-2 minutes.
- 3. Add ground cumin, paprika, turmeric, salt, and black pepper to the pan and sauté for 30 seconds to release their aroma.
- 4. Dice the tomatoes into small pieces and add them to the pan, cooking for 5-7 minutes until softened.
- 5. Pour in the coconut milk and water, stirring well to combine with the tomatoes and spices.
- 6. Add the cooked chickpeas to the pan and simmer for 10 minutes, allowing them to absorb the flavors.
- 7. Add the chopped spinach to the stew, stirring until wilted, about 2-3 minutes.
- 8. Adjust the seasoning with additional salt or pepper if needed.
- 9. Finish with a splash of lemon juice and stir before serving.
- 10. Serve the stew hot in bowls, optionally accompanied by crusty bread or rice.
