Instructions
- 1. In a large saucepan, combine 1 clove minced garlic, 1/2 diced onion, 2 1/2 cups diced tomatoes, 1 bay leaf, 1/8 tsp fennel, 1/2 tsp thyme, 1/2 tsp basil, 1/2 tsp oregano, and a pinch of cayenne pepper. Simmer over medium heat for 10 minutes, stirring occasionally.
- 2. Add 1/4 lb cod fillet, cut into bite-sized pieces, to the saucepan. Simmer gently for 2 minutes.
- 3. Add 1/4 lb haddock fillets to the saucepan. Simmer for 5 to 7 minutes, or until the fish flakes easily with a fork and is cooked through.
- 4. Remove the bay leaf and adjust seasoning with salt to taste.
- 5. Serve the stew hot, dividing it into three portions. Each serving includes a generous amount of seafood and vegetables.
