Instructions

  1. 1. Heat 2 tablespoons of oil in a large skillet over medium heat. Add 1 minced clove of garlic and sauté lightly until fragrant, about 1 minute.
  2. 2. Add 1 diced onion, 1 diced bell pepper, 2 diced carrots, and 2 diced stalks of celery to the skillet. Sauté until the onion is tender, about 5-7 minutes.
  3. 3. Stir in 1 can (400 g) of tomato sauce and 1 diced tomato. Sprinkle with 1 teaspoon of oregano, 1 teaspoon of garlic salt, 1/2 teaspoon of basil, and a pinch of salt. Mix well.
  4. 4. Cover the skillet and let the mixture simmer for 10 minutes to blend the flavors.
  5. 5. Cut 1 1/2 pounds of hake fillets into serving-sized portions and add them to the skillet. Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 10-12 minutes, or until the fish is firm and flakes easily with a fork.
  6. 6. Serve the hake and vegetable medley warm. Pair with cheese bread and a fresh salad for a complete meal.
