This vegan Mediterranean-inspired fava bean spread is a quick and delicious dinner solution. Perfectly seasoned with fresh herbs, lemon, and olive oil, it's served with toasted pita for a satisfying meal.
Ingredients
- - Old India Coriander Leaves
- - Cortas Foul Medammes - Cooked Fava Beans
- 100 G Jumbo Garlic 100g
- 1 Kg Tomatoes 1kg
- 3 Per Pack Wholegood Organic Unwaxed Lemons
- - Filippo Berio Garlic Flavoured Olive Oil
- 2 Per Pack Al'Fez Lebanese Za'Atar Flatbreads
- 60G Mill & Mortar Organic Salt Of Hearts, 60G
Instructions
- 1. Heat 1 can of fava beans in a small saucepan over medium heat for 3-4 minutes until warmed through.
- 2. Transfer the beans to a bowl and mash them with a fork or spoon until mostly smooth.
- 3. Add 1 minced clove of garlic, 2 tablespoons of chopped coriander leaves, 1 diced tomato, the juice of 1/2 a lemon, and 1/2 teaspoon of salt to the mashed beans. Mix well.
- 4. Transfer the mixture to a blender or food processor and blend until smooth. Adjust the consistency with a small amount of water if needed.
- 5. Spread the blended mixture onto a flat plate and drizzle 2 tablespoons of olive oil evenly over the top.
- 6. Garnish with additional chopped coriander leaves and diced tomato for a fresh touch.
- 7. Toast 2 flatbreads until golden and cut them into quarters. Serve alongside the fava bean spread.
