- 350G Typically Daylesford Organic Chicken Breasts
- - Forest Whole Foods Ltd Organic Long Grain Brown Rice
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 250 G Veenas Fresh Garlic
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 580G Gordal Olives With Dried Tomatoes And Capers, 580G
- 1 Block Greek Feta Cheese 900g
- 324G Borough Broth Low Fodmap Chicken Bone Broth
- - Schwartz Italian Seasoning
Instructions
- 1. Wash hands thoroughly. Rinse the frozen chicken breasts under cool water for 1 to 2 minutes to remove the protective ice glaze. Wash hands again.
- 2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes per side, or until fully cooked and golden brown. Remove from the skillet and set aside.
- 3. In the same skillet, add 1 teaspoon of minced garlic and sauté for 1 minute until fragrant. Add 2 cups of brown rice and stir to coat with the garlic and oil.
- 4. Pour in 1 1/2 cups of chicken broth and bring to a boil. Reduce the heat to low, cover, and simmer for 35-40 minutes, or until the rice is tender and the broth is absorbed.
- 5. While the rice is cooking, dice the cooked chicken into bite-sized pieces. Drain 1 can of diced tomatoes and chop 2 tablespoons of olives.
- 6. Once the rice is done, stir in the diced chicken, tomatoes, olives, and 1/2 teaspoon of italian seasoning. Cook for an additional 2-3 minutes to heat through.
- 7. Serve the chicken and rice mixture in bowls, topped with crumbled feta cheese. Enjoy your Mediterranean-inspired dinner!
