- Pack Of 2 Aubergine/Eggplant Medium (Pack Of 2)
- - Filippo Berio Garlic Flavoured Olive Oil
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 200 G Authentic Greek Yogurt
- 100G Terre Exotique Winemaker'S Salt, 100G
- - Mccormick Cumin Powder
- 60G Terre Exotique Smoked Paprika, 60G
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Wash and dry 4 medium eggplants, then remove the stems. Make a slit along the length of each eggplant, cutting only halfway through.
- 3. In a small bowl, mix 1/2 cup olive oil with 2 teaspoons salt and 1 teaspoon pepper. Drizzle 1 tablespoon of the mixture into each slit and rub the remaining oil mixture over the entire surface of the eggplants.
- 4. Lightly grease an 11 x 7-inch baking dish with olive oil and place the prepared eggplants inside. Bake for 30 minutes or until the eggplants are tender.
- 5. While the eggplants are baking, prepare the spiced yogurt. In a bowl, combine 1 cup greek yogurt, 1/2 teaspoon ground cumin, 1/4 teaspoon smoked paprika, and a pinch of salt. Mix well and set aside.
- 6. Once the eggplants are done, remove them from the oven and let them cool slightly. Serve warm with a generous dollop of the spiced yogurt on top.
