- 250G Morelli Lemon Pepper Linguine Pasta, 250G
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- 1 Kg Tomatoes 1kg
- Medium Thanksgiving Whole Turkey
- - Ktc Vegetable Oil
- - Chilli Powder Rajah
- - Mccormick Cumin Powder
- - Tata Salt
- 400G Dunns River Red Kidney Beans
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a large deep skillet over medium heat. Add 1 can (about 400 g) of red kidney beans (drained and rinsed) and cook, stirring occasionally, until heated through, about 5 minutes.
- 2. Stir in 1 finely chopped onion, 2 minced garlic cloves, 1 tablespoon of chili powder, and 1 teaspoon of cumin. Cook until the onion is softened and fragrant, about 5 minutes.
- 3. Add 1 can (about 400 g) of red kidney beans (drained and rinsed), 1 diced tomato, and 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 15 minutes. Season with salt and pepper to taste.
- 4. Meanwhile, cook 1 lb of linguine according to the package directions. Drain the pasta and return it to the pot.
- 5. Stir the prepared chili mixture into the cooked linguine. Heat over medium heat, stirring, until the pasta is well coated and the sauce is simmering.
- 6. Remove from heat and stir in 2 tablespoons of chopped fresh coriander leaf. Serve immediately.
