  • 250G Morelli Lemon Pepper Linguine Pasta, 250G
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 100 G Jumbo Garlic 100g
  • 1 Kg Tomatoes 1kg
  • Medium Thanksgiving Whole Turkey
  • - Ktc Vegetable Oil
  • - Chilli Powder Rajah
  • - Mccormick Cumin Powder
  • - Tata Salt
  • 400G Dunns River Red Kidney Beans

Instructions

  1. 1. Heat 2 tablespoons of vegetable oil in a large deep skillet over medium heat. Add 1 can (about 400 g) of red kidney beans (drained and rinsed) and cook, stirring occasionally, until heated through, about 5 minutes.
  2. 2. Stir in 1 finely chopped onion, 2 minced garlic cloves, 1 tablespoon of chili powder, and 1 teaspoon of cumin. Cook until the onion is softened and fragrant, about 5 minutes.
  3. 3. Add 1 can (about 400 g) of red kidney beans (drained and rinsed), 1 diced tomato, and 2 cups of water. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 15 minutes. Season with salt and pepper to taste.
  4. 4. Meanwhile, cook 1 lb of linguine according to the package directions. Drain the pasta and return it to the pot.
  5. 5. Stir the prepared chili mixture into the cooked linguine. Heat over medium heat, stirring, until the pasta is well coated and the sauce is simmering.
  6. 6. Remove from heat and stir in 2 tablespoons of chopped fresh coriander leaf. Serve immediately.
