- 50G Picard Chopped Flat Parsley
- 450G Pack'D Organic Broccoli Florets
- 100 G Jumbo Garlic 100g
- 3 X 400G Garofalo Chopped Italian Tomatoes
- 250G Morelli Lemon Pepper Linguine Pasta, 250G
- 1 Kg Dried Apricots, 1Kg
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- - McCormick Gourmet Organic Cayenne Pepper MCG-24431
- - Tata Salt
Instructions
- 1. Bring a large pot of unsalted water to a boil. Add 4 cups of broccoli florets and cook until just tender, about 2 to 3 minutes. Drain and rinse under cold running water, then set aside.
- 2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.
- 3. Add 4 chopped tomatoes to the skillet and cook until they soften and release their juices, about 5 minutes.
- 4. Stir in 2 tablespoons of golden raisins and 1/8 teaspoon of cayenne pepper. Cook for another 2 minutes to combine the flavors.
- 5. Meanwhile, cook 6 ounces of linguine in a pot of boiling salted water according to package instructions. Drain and set aside.
- 6. Add the cooked broccoli to the tomato mixture and toss to coat. Adjust seasoning with salt and pepper to taste.
- 7. Combine the cooked linguine with the broccoli and tomato sauce. Toss well to ensure the pasta is evenly coated.
- 8. Garnish with 2 tablespoons of chopped parsley and serve warm.
