Ingredients

  • 50G Picard Chopped Flat Parsley
  • 450G Pack'D Organic Broccoli Florets
  • 100 G Jumbo Garlic 100g
  • 3 X 400G Garofalo Chopped Italian Tomatoes
  • 250G Morelli Lemon Pepper Linguine Pasta, 250G
  • 1 Kg Dried Apricots, 1Kg
  • 250 ml Critida Lemon Infused Olive Oil 250Ml
  • - McCormick Gourmet Organic Cayenne Pepper MCG-24431
  • - Tata Salt

Instructions

  1. 1. Bring a large pot of unsalted water to a boil. Add 4 cups of broccoli florets and cook until just tender, about 2 to 3 minutes. Drain and rinse under cold running water, then set aside.
  2. 2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.
  3. 3. Add 4 chopped tomatoes to the skillet and cook until they soften and release their juices, about 5 minutes.
  4. 4. Stir in 2 tablespoons of golden raisins and 1/8 teaspoon of cayenne pepper. Cook for another 2 minutes to combine the flavors.
  5. 5. Meanwhile, cook 6 ounces of linguine in a pot of boiling salted water according to package instructions. Drain and set aside.
  6. 6. Add the cooked broccoli to the tomato mixture and toss to coat. Adjust seasoning with salt and pepper to taste.
  7. 7. Combine the cooked linguine with the broccoli and tomato sauce. Toss well to ensure the pasta is evenly coated.
  8. 8. Garnish with 2 tablespoons of chopped parsley and serve warm.
