Ingredients
- - Sunita Lemon Juice Organic
- 750 Ml Bevelini Extra Virgin Olive Oil, 750Ml
- - Greenfields Five Mixed Peppercorns
- 10G Top-Op Bay Leaves 10g
Instructions
- 1. In a 5-quart pot, combine 4 cups of water, 4 tablespoons of lemon juice, 1 tablespoon of olive oil, 2 bay leaves, and 10 peppercorns. Bring the mixture to a boil.
- 2. While the liquid is heating, prepare 4 medium artichokes by trimming the stems and removing tough outer leaves.
- 3. Once the liquid is boiling, add the prepared artichokes to the pot. Partially cover with a lid and return to a boil.
- 4. Reduce the heat to a simmer and cook the artichokes until the stem ends are easily pierced with a fork, about 30 minutes for medium-sized artichokes.
- 5. Carefully remove the artichokes from the pot and drain them upside down to remove excess liquid.
- 6. Serve the artichokes hot or cold, optionally accompanied by a Jain-friendly dipping sauce such as a yogurt-based dip or a spiced olive oil drizzle.
