- - Oregano 100g
- - Mowi Scottish Salmon Fillets
- - PLJ Lemon Juice Original Sharp 500ml
- 1 L Olive Oil – Organic
- 50G Black Garlic Cloves, 50G
- 1 Pack Planet Organic G's Baby Leaf Spinach
- - Greenfields Black Peppercorns
Instructions
- 1. Preheat your oven to 180°C and line a baking tray with parchment paper.
- 2. In a small bowl, mix lemon juice, olive oil, chopped parsley, black pepper, and oregano to prepare the marinade.
- 3. Place the salmon fillets on the baking tray and evenly coat them with the prepared marinade.
- 4. Bake the salmon in the oven for 20 minutes until tender and flaky.
- 5. While the salmon is baking, peel and finely chop the garlic cloves.
- 6. Heat a skillet over medium heat and add a small amount of olive oil.
- 7. Sauté the garlic in the skillet until fragrant and lightly golden, about 2 minutes.
- 8. Add the baby spinach to the skillet and cook for 3-4 minutes until wilted, stirring occasionally.
- 9. Season the spinach with salt and black pepper, ensuring even flavor distribution.
- 10. Remove the salmon from the oven and allow it to rest for 2 minutes before serving.
- 11. Plate the baked salmon alongside the sautéed garlic spinach for a balanced meal.
