- 600G Picard-Organic Courgette Slices
- 1kg 1kg Green Pepper
- 200 G Authentic Greek Yogurt
- 1 Bunch Baby Spinach - Bunch
Instructions
- 1. Cook 3 slices of turkey bacon in a skillet over medium heat until crispy. Remove, let cool, and crumble into small pieces.
- 2. In a large salad bowl, layer 1 1/2 cups of fresh spinach, 2 cups of sliced courgette, and 10 oz of diced green pepper.
- 3. In a small bowl, mix 1/2 cup of greek yogurt and 1/2 cup of greek yogurt until smooth. Spread this mixture evenly over the top of the salad layers.
- 4. Sprinkle the crumbled turkey bacon and an additional 2 tablespoons of grated parmesan cheese over the top for garnish.
- 5. Cover the salad with plastic wrap and refrigerate for at least 2 hours or overnight to allow the flavors to meld. Serve chilled and enjoy!
