Instructions
- 1. In a large mixing bowl, combine 1 egg, 1 tsp salt, and 1/4 tsp pepper. Mix thoroughly and shape into small patties, about 1 inch in diameter.
- 2. Heat a large pot over medium heat and lightly brown the patties on all sides. Remove the patties and set them aside.
- 3. In the same pot, sauté 1 diced onion, 3/4 cup diced red bell pepper, and 3/4 cup diced carrot until softened, about 5 minutes.
- 4. Add 1/2 head of chopped cabbage, 2 diced tomatoes, and 1 bay leaf to the pot. Stir well and cook for another 3 minutes.
- 5. Pour in 1 liter of vegetable broth and 2 tbsp soy sauce. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes.
- 6. Add 1/2 cup of uncooked rice and the browned patties to the pot. Simmer for an additional 20 minutes, stirring occasionally, until the rice is tender and the patties are fully cooked.
