  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth

Instructions

  1. 1. Heat a large stockpot over medium heat and add 1 tablespoon of vegetable oil.
  2. 2. Add 2 finely chopped onions and 2 tablespoons of minced shallot to the pot. Cook and stir for 3 to 5 minutes, or until the onions are tender.
  3. 3. Add 2 diced bell peppers and cook for another 4 to 5 minutes, stirring occasionally, until the peppers are softened.
  4. 4. Add 1 additional diced red bell pepper to the pot and cook for 8 to 10 minutes, stirring occasionally, until softened and slightly caramelized.
  5. 5. Stir in 1 tablespoon of ground cumin, 1 teaspoon of oregano, 1 teaspoon of thyme, and 1 tablespoon of ground red pepper. Cook for 2 to 3 minutes to toast the spices.
  6. 6. Add 1 diced red bell pepper, 1 can of chopped tomatoes, 1 cup of vegetable broth, 1/3 cup of tomato paste, and 1 tablespoon of honey. Stir well to combine.
  7. 7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 45 minutes, stirring occasionally.
  8. 8. Uncover the pot and continue simmering for an additional 30 minutes, or until the chili thickens to your desired consistency.
  9. 9. Stir in 2 cans of black beans and cook for 5 to 10 minutes, or until the beans are heated through.
  10. 10. Season the chili with salt to taste and garnish with fresh cilantro before serving.
