- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth

Instructions
- 1. Heat a large stockpot over medium heat and add 1 tablespoon of vegetable oil.
- 2. Add 2 finely chopped onions and 2 tablespoons of minced shallot to the pot. Cook and stir for 3 to 5 minutes, or until the onions are tender.
- 3. Add 2 diced bell peppers and cook for another 4 to 5 minutes, stirring occasionally, until the peppers are softened.
- 4. Add 1 additional diced red bell pepper to the pot and cook for 8 to 10 minutes, stirring occasionally, until softened and slightly caramelized.
- 5. Stir in 1 tablespoon of ground cumin, 1 teaspoon of oregano, 1 teaspoon of thyme, and 1 tablespoon of ground red pepper. Cook for 2 to 3 minutes to toast the spices.
- 6. Add 1 diced red bell pepper, 1 can of chopped tomatoes, 1 cup of vegetable broth, 1/3 cup of tomato paste, and 1 tablespoon of honey. Stir well to combine.
- 7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 45 minutes, stirring occasionally.
- 8. Uncover the pot and continue simmering for an additional 30 minutes, or until the chili thickens to your desired consistency.
- 9. Stir in 2 cans of black beans and cook for 5 to 10 minutes, or until the beans are heated through.
- 10. Season the chili with salt to taste and garnish with fresh cilantro before serving.
