Instructions
- 1. Rinse the quinoa under cold water, then cook it in a pot with double the amount of water until tender, about 15 minutes.
- 2. While the quinoa is cooking, peel and julienne the carrots, slice the zucchini, and chop the red bell pepper into thin strips.
- 3. Heat sesame oil in an air fryer-safe pan, then add minced garlic and ginger, sautéing until fragrant for about 2 minutes.
- 4. Add the chopped vegetables (carrots, zucchini, and bell pepper) to the pan and stir-fry for 5 minutes until slightly softened.
