Instructions

  1. 1. Preheat the oven to 350°F (175°C). Grease a 2-quart baking dish with 1 tablespoon of butter.
  2. 2. Heat 2 tablespoons of butter in a skillet over medium heat. Add 1 cup of spinach and sauté until wilted, about 3-4 minutes. Remove from heat, drain any excess liquid, and let cool.
  3. 3. In a bowl, combine the cooled spinach, 1 egg, and 1/4 cup grated Parmesan cheese. Mix well to form the stuffing.

  5. 5. Season 3 chicken breasts with salt and pepper. Roll each breast in the almond flour mixture to coat evenly.
  6. 6. Place the coated chicken breasts in the greased baking dish. Spoon large mounds of the spinach mixture onto each chicken breast.
  7. 7. Sprinkle the remaining almond flour mixture over the spinach-stuffed chicken and drizzle with 1 tablespoon of melted butter.
  8. 8. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. 9. Remove from the oven and let rest for 5 minutes before serving. Enjoy your keto-friendly spinach-stuffed chicken bake!
