- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 1 Kg Yellow/White Onion 1kg
- - Thomas Ridley Fresh British Beef Mince
- - Cathedral City Mature Cheddar Cheese
- 400G Sabarot Chia Seeds, 400G
- 395G D'Aucy Chopped Spinach
- NaN Old India Blanched Ground Almond Flour
Instructions
- 1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
- 2. Cook 1 cup of spinach in a skillet over medium heat until wilted. Drain and set aside, reserving 1/2 cup of the liquid.
- 3. In the same skillet, heat 1 tablespoon of olive oil and sauté 1 diced onion until translucent, about 5 minutes.
- 4. Add 1 lb of ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess grease.
- 5. Stir in the reserved spinach liquid, 6 oz of tomato paste, and 8 oz of tomato sauce into the beef mixture. Simmer for 10 minutes, stirring occasionally.
- 6. In a mixing bowl, combine the cooked spinach, 1 cup of shredded cheddar cheese, 1/2 cup of almond flour, and 2 tablespoons of chia seeds mixed with 6 tablespoons of water. Mix well to form a cohesive mixture.
- 7. Spread the spinach mixture evenly in the prepared baking dish.
- 8. Pour the beef and tomato mixture over the spinach layer, spreading it evenly.
- 9. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the top is lightly browned.
- 10. Remove from the oven and let it rest for 5 minutes before serving.
