Instructions
- 1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- 2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat.
- 3. Add 1 cup of finely chopped onion and cook, stirring occasionally, until soft and golden, about 5 to 6 minutes.
- 4. Stir in 1 minced clove of garlic and cook for an additional 30 seconds. Remove the skillet from heat.
- 5. Squeeze fresh spinach to remove excess moisture and set aside.
- 6. In a large mixing bowl, whisk together 1/2 cup of water and 1/4 cup of chia seeds until well combined and let sit for 5 minutes to thicken.
- 7. Stir in the prepared spinach, the onion and garlic mixture, and 1 cup of almond flour. Mix thoroughly.
- 8. Add 1 cup of shredded mozzarella cheese, 1 cup of grated Parmesan cheese, 1/2 teaspoon of oregano, 1/4 teaspoon of dried sage, and 1/2 cup of chopped fresh parsley. Mix until evenly combined.
- 9. Transfer the mixture to the prepared baking dish and spread it out evenly.
- 10. Bake in the preheated oven for 40 minutes, or until the top is set and lightly golden.
- 11. Remove from the oven and let cool on a wire rack for 10 minutes.
- 12. Cut the baked mixture diagonally into 2 to 3-inch diamond shapes for serving.
