Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. 2. Heat 2 tablespoons of olive oil in a medium skillet over medium heat.
  3. 3. Add 1 cup of finely chopped onion and cook, stirring occasionally, until soft and golden, about 5 to 6 minutes.
  4. 4. Stir in 1 minced clove of garlic and cook for an additional 30 seconds. Remove the skillet from heat.
  5. 5. Squeeze fresh spinach to remove excess moisture and set aside.
  6. 6. In a large mixing bowl, whisk together 1/2 cup of water and 1/4 cup of chia seeds until well combined and let sit for 5 minutes to thicken.
  7. 7. Stir in the prepared spinach, the onion and garlic mixture, and 1 cup of almond flour. Mix thoroughly.
