- 395G D'Aucy Chopped Spinach
- - Ktc Vegetable Oil
- - Tata Salt
- - Schwartz Paprika
Instructions
- 1. Heat 2 tablespoons of vegetable oil in a large saucepan over medium heat.
- 2. Add 3/4 cup of finely chopped leek and sauté for 3-4 minutes until softened.
- 3. Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
- 4. Pour in 6 cups of chicken broth and bring the mixture to a gentle boil.
- 5. Add 8 ounces of shirataki noodles and 1 teaspoon of salt. Cook for 2-3 minutes or until the noodles are heated through.
- 6. Reduce the heat to low and stir in 6 cups of unsweetened almond milk, 2 cups of fresh spinach, 1/2 pound of shredded gruyere cheese, and 1/2 pound of shredded provolone cheese.
- 7. Cook gently, stirring frequently, until the cheese is fully melted and the soup is creamy. Do not let the soup boil.
- 8. Ladle the soup into bowls and garnish with a sprinkle of paprika and pork scratchings, if desired. Serve warm.
