- 1. Preheat the oven to 350°F (175°C).
- 2. Drain the hominy and place it evenly in a 2-quart casserole dish.
- 3. Heat the coconut milk in a saucepan over medium heat until warmed through. Stir in 1/4 teaspoon of to enhance the flavor.
- 4. Add grated cheddar cheese to the coconut milk and stir until melted and combined.
- 5. Pour the cheese and coconut milk mixture evenly over the hominy in the casserole dish.
