Ingredients
- 250G Clearspring Organic Soya Mince
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- - Cooks & Co Sliced Mushrooms
- 400G Khanum Seedless Tamarind Pulp, 400G
- 250G Tilda Wild Rice
- 500 G Brown & Polson Cornflour
- - Ktc Vegetable Oil
Instructions
- 1. Heat a skillet over medium heat and add 1 tbsp of oil. Add 200 g of soy mince and cook for 5-7 minutes until lightly browned. Remove and set aside.
- 2. In the same skillet, add 2 finely chopped onions and fry slowly until they turn transparent, about 5 minutes.
- 3. Add 1 cup of chopped mixed vegetables (such as bell peppers, carrots, and beans) to the skillet and stir-fry for 3-4 minutes.
- 4. Return the cooked soy mince to the skillet and mix well with the vegetables.
- 5. Add 1 cup of sliced mushrooms and stir to combine. Cook for another 2-3 minutes.
- 6. Add 2 tbsp of soy sauce and 2 tbsp of tamarind pulp, stirring well to create a rich sauce. Simmer for 5 minutes on low heat.
- 7. Serve hot with steamed rice or flatbreads for a complete meal.
