  • - Wilton Wholefoods Cardamom Powder 10g
  • - RealFoodSource Saffron Strands

Instructions

  1. 1. Combine 2 cups heavy cream and 1 1/2 cups sugar in a medium-sized saucepan.
  2. 2. Heat the mixture over medium heat, stirring occasionally, until it becomes golden brown and reaches the soft ball stage (approximately 235°F or 112°C).
  3. 3. Add 2 tablespoons lemon juice, 1/2 teaspoon cardamom powder, and a pinch of saffron strands to the mixture.
  4. 4. Continue to cook the mixture, stirring gently, until it again reaches the soft ball stage.
  5. 5. Drop spoonfuls of the praline mixture onto a greased tray or parchment paper, spreading each into a 1/4-inch thick mound about 4 inches in diameter.
  6. 6. Allow the pralines to cool and harden completely at room temperature.
  7. 7. Once hardened, gently lift each praline using a spatula.
  8. 8. Store the pralines in an airtight container with wax paper between layers to prevent sticking.
