A fragrant and flavorful vegetable biryani cooked in the traditional Hyderabadi dum style, layered with aromatic basmati rice and spiced vegetables.
Ingredients
- 500 G Trs Green Lentils
- 500 G Fresh Vine Tomato 500g
- 250 G Veenas Fresh Garlic
- 100 G Saras Turmeric Haldi Powder
- 100G Natco Kala Namak (Black Salt) 100g
Instructions
- 1. Wash and soak the basmati rice in water for 20 minutes, then drain it completely.
- 2. Heat oil in a pan and sauté sliced onions until golden brown, then set them aside.
- 3. In the same pan, add cloves, cardamom, cinnamon, and bay leaf; fry until aromatic.
- 4. Add ginger-garlic paste and green chilies, sauté for 2 minutes until fragrant.
- 5. Stir in chopped tomatoes, turmeric, red chili powder, and biryani masala; cook until soft.
- 6. Add curd (or plant-based alternative), mixed vegetables, and salt; cook for 5 minutes.
- 7. Layer half of the cooked rice in a heavy-bottomed pot, followed by the vegetable mixture.
- 8. Add the remaining rice on top and garnish with fried onions, mint leaves, and coriander leaves.
- 9. Cover the pot with a tight-fitting lid and cook on low heat for 15 minutes (dum style).
- 10. Remove from heat and let it rest for 5 minutes before opening the lid.
- 11. Gently mix the layers without breaking the rice grains, ensuring even distribution.
- 12. Serve the biryani hot with raita or a side salad.
