Ingredients

  • 100 G Jumbo Garlic 100g
  • 250G Ginger - 250g
  • NaN Tilda Long Grain Rice
  • - Oxo Chicken Stock Cubes
  • 396G Cauldron Organic Tofu Block
  • 1 Kg Natural Sea Salt Bwfo
  • - Sapna Ginger Garlic Paste 1kg

Instructions

  1. 1. Wash and soak the basmati rice in water for 20 minutes, then drain and set aside.
  2. 2. Cut the tofu into cubes and lightly fry them in 1 tablespoon of oil until golden brown.
  3. 3. Heat the remaining oil in a deep pan and add cardamom, cloves, cinnamon, and bay leaf. Sauté until aromatic.
  4. 4. Add sliced onions and cook until golden brown, stirring occasionally to avoid burning.
  5. 5. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
  6. 6. Add chopped tomatoes, green chilies, turmeric, red chili powder, and biryani masala. Cook until the tomatoes are soft.
  7. 7. Mix in the plant-based curd, mint leaves, and coriander leaves. Cook for 2-3 minutes on medium heat.
  8. 8. Add the fried tofu to the pan and mix well to coat it with the masala.
  9. 9. Layer the soaked rice over the tofu masala without stirring. Add water and sprinkle salt evenly.
  10. 10. Cover the pan with a tight-fitting lid and cook on low heat for 15 minutes until the rice is fully cooked.
  11. 11. Turn off the heat and let the biryani rest for 5 minutes before gently fluffing it with a fork.
  12. 12. Serve hot, garnished with fresh mint and coriander leaves.
