Ingredients
- - Filippo Berio Garlic Flavoured Olive Oil
- 50G Pepper Black Ground BWFO
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1kg 1kg Green Pepper
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
- - Cawston Press Pressed Tomato Juice
- 1 Kg Coarse Sea Salt, 1Kg
Instructions
- 1. Heat 2 tablespoons of olive oil in a large heavy skillet over medium-high heat.
- 2. Season 1 diced onion and 1/2 diced green bell pepper with 1 tablespoon of coarse sea salt and 1/2 teaspoon of ground black pepper. Add them to the skillet and cook until softened, about 5-7 minutes.
- 3. Add 1 additional diced onion and 1/2 diced green bell pepper to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are softened.
- 4. Transfer the cooked vegetables to a slow cooker. Pour in 2 1/2 cups of hot & sour vegetable broth.
- 5. Cover and cook on Low for 6 to 8 hours, or until the flavors are well combined.
- 6. During the last 30 minutes of cooking, stir in 1 cup of mixed vegetables and 1 cup of pressed tomato juice. Allow the soup to finish cooking until the vegetables are tender.
- 7. Taste and adjust seasoning if needed. Serve hot and enjoy your comforting kosher vegetable soup.
