Ingredients

  • - Filippo Berio Garlic Flavoured Olive Oil
  • 50G Pepper Black Ground BWFO
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 1kg 1kg Green Pepper
  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
  • - Cawston Press Pressed Tomato Juice
  • 1 Kg Coarse Sea Salt, 1Kg

Instructions

  1. 1. Heat 2 tablespoons of olive oil in a large heavy skillet over medium-high heat.
  2. 2. Season 1 diced onion and 1/2 diced green bell pepper with 1 tablespoon of coarse sea salt and 1/2 teaspoon of ground black pepper. Add them to the skillet and cook until softened, about 5-7 minutes.
  3. 3. Add 1 additional diced onion and 1/2 diced green bell pepper to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the vegetables are softened.
  4. 4. Transfer the cooked vegetables to a slow cooker. Pour in 2 1/2 cups of hot & sour vegetable broth.
  5. 5. Cover and cook on Low for 6 to 8 hours, or until the flavors are well combined.
  6. 6. During the last 30 minutes of cooking, stir in 1 cup of mixed vegetables and 1 cup of pressed tomato juice. Allow the soup to finish cooking until the vegetables are tender.
  7. 7. Taste and adjust seasoning if needed. Serve hot and enjoy your comforting kosher vegetable soup.
