Instructions

  1. 1. Preheat oven to 350°F (175°C). Prepare a 2-quart casserole dish with cooking spray and set aside.
  2. 2. In a large skillet, heat 1/2 teaspoon olive oil over medium heat. Add 1 pound ground chicken and 1/2 cup diced onion. Cook until the chicken is no longer pink and the onions are tender, about 5-7 minutes.
  3. 3. Stir in 15 ounces of tomato sauce, 1/2 teaspoon dried basil, and 1/2 cup grated Parmesan cheese. Simmer the mixture for 10 minutes, stirring occasionally.
  4. 4. Meanwhile, cook 14 ounces of penne pasta according to the package instructions. Drain and set aside.
  5. 5. In a small saucepan, melt 1 tablespoon butter over medium heat. Stir in 2 tablespoons flour and cook for 1 minute. Gradually whisk in 1 1/2 cups milk and cook until the mixture thickens, about 3-5 minutes. Remove from heat and stir in 2 beaten egg whites.
  6. 6. Combine the cooked penne pasta with the milk mixture, ensuring the pasta is evenly coated.
  7. 7. Spread the chicken and tomato mixture evenly across the bottom of the prepared casserole dish. Top with the macaroni mixture, spreading it out evenly.
