Instructions
- 1. Preheat oven to 350°F (175°C). Prepare a 2-quart casserole dish with cooking spray and set aside.
- 2. In a large skillet, heat 1/2 teaspoon olive oil over medium heat. Add 1 pound ground chicken and 1/2 cup diced onion. Cook until the chicken is no longer pink and the onions are tender, about 5-7 minutes.
- 3. Stir in 15 ounces of tomato sauce, 1/2 teaspoon dried basil, and 1/2 cup grated Parmesan cheese. Simmer the mixture for 10 minutes, stirring occasionally.
- 4. Meanwhile, cook 14 ounces of penne pasta according to the package instructions. Drain and set aside.
- 5. In a small saucepan, melt 1 tablespoon butter over medium heat. Stir in 2 tablespoons flour and cook for 1 minute. Gradually whisk in 1 1/2 cups milk and cook until the mixture thickens, about 3-5 minutes. Remove from heat and stir in 2 beaten egg whites.
- 6. Combine the cooked penne pasta with the milk mixture, ensuring the pasta is evenly coated.
- 7. Spread the chicken and tomato mixture evenly across the bottom of the prepared casserole dish. Top with the macaroni mixture, spreading it out evenly.
- 8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the dish is heated through.
- 9. Remove from the oven and let cool for 5 minutes before serving. Garnish with additional Parmesan cheese or fresh basil if desired.
