Ingredients
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- 1 stick Organic Celery Stick
- - Cannellini Beans
- 12 Per Pack Daylesford Organic Mixed Weight Eggs
- 50G Picard Chopped Flat Parsley
- 1 Block Greek Feta Cheese 900g
- - Ktc Vegetable Oil
Instructions
- 1. Heat 1 tablespoon of oil in a skillet over medium heat. Add 1 cup of finely chopped onion and 1 minced clove of garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- 2. Stir in 1 cup of diced celery and cook for another 5 minutes until the celery softens.
- 3. In a large bowl, mash 3 cups of cannellini beans, leaving some chunks for texture. Add the sautéed onion and celery mixture to the beans.
- 4. Mix in 1 beaten egg, 1/4 cup of chopped parsley, 1/4 teaspoon of, 1/4 teaspoon of, and 1/4 teaspoon of feta cheese. Combine until evenly mixed.
- 5. Form the mixture into eight patties, each about 1/2 inch thick, and place them on a nonstick baking sheet.
- 6. Bake the patties in a preheated oven at 350°F (175°C) for 20 minutes. Remove from the oven, top each patty with 4 oz of feta cheese, and return to the oven for an additional 10 minutes until the cheese is melted and bubbly.
- 7. Serve the patties warm, garnished with additional parsley if desired.
