Instructions
- 1. Preheat your oven to 350°F (175°C) and lightly coat a 1 1/2-quart casserole dish with cooking spray.
- 2. In the casserole dish, combine 3/4 cup dried lentils, 3/4 cup rice, 1 cup chopped onion, 1/2 teaspoon thyme, 1/2 teaspoon basil, 1/2 teaspoon oregano, 1/8 teaspoon sage, 1/4 teaspoon salt, and 1/4 teaspoon garlic powder. Mix well to evenly distribute the ingredients.
- 3. Pour in 2 cups of vegetable broth and stir to combine all the ingredients thoroughly.
- 4. Cover the casserole dish tightly with a lid or aluminum foil and bake in the preheated oven for 1 1/2 hours, or until the lentils and rice are tender and the liquid is absorbed.
- 5. Remove the casserole from the oven, uncover, and sprinkle 3/4 cup crumbled feta cheese evenly over the top. Return to the oven uncovered for 5-10 minutes, or until the cheese is warmed and slightly melted.
