- 50G Picard Chopped Flat Parsley
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 2.5 Kg Casa Marrazzo Organic Chopped Tomatoes, 2.5Kg
- 200G Carr'S Crackers Selection
- 350G Natoora Large New Season Unwaxed Lemons
- 200G All Things Butter Unsalted Butter
- 50G Pepper Black Ground BWFO
- 225G The Tofoo Co. Original Seitan
- 250G Shallot Onion - 250g
Instructions
- 1. Pat the scallops dry with paper towels to remove excess moisture.
- 2. Season the scallops with freshly ground black pepper.
- 3. Heat 3 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
- 4. Add the scallops to the skillet and sear for 2-3 minutes per side until golden brown.
- 5. Add 2 tablespoons of minced garlic to the skillet and sauté for 30 seconds until fragrant.
- 6. Stir in 1/2 cup of diced tomatoes and cook for 1 minute, allowing the flavors to meld.
- 7. Add 2 cups of crushed crackers, the juice of 1 lemon, 2 tablespoons of chopped parsley, and 2 tablespoons of unsalted butter to the skillet. Stir well to combine.
- 8. Cook for an additional 2-3 minutes, stirring frequently, until the scallops are cooked through and the crackers are golden and slightly crisp.
- 9. Garnish with the remaining 1 tablespoon of parsley and serve immediately.
