Ingredients
- - Mori-Nu Silken Firm Tofu
- 280G Caprichos Del Paladar Roasted Chopped Tomatoes, 280G
- 1 Kg Red Onion 1kg
- 1 L Olive Oil – Organic
- - Ducros Dried Thyme
- - Sussex Wholefoods Organic Dried Basil
- - Greenfields Black Peppercorns
- 50G Black Garlic Cloves, 50G
- - Tata Salt
Instructions
- 1. Press the tofu to remove excess water, then cut it into small cubes.
- 2. Dice the zucchini, eggplant, and tomatoes into bite-sized pieces.
- 3. Finely chop the onion and mince the garlic cloves.
- 4. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- 5. Sauté the tofu cubes until golden on all sides, then set aside.
- 6. Add the remaining olive oil to the skillet and sauté the onion until translucent.
- 7. Stir in the garlic and cook for another minute until fragrant.
- 8. Add the zucchini and eggplant, cooking until they begin to soften, about 5 minutes.
- 9. Stir in the tomatoes, fresh thyme, salt, and black pepper, and simmer for 15 minutes.
- 10. Add the cooked tofu back to the skillet and mix gently to combine.
- 11. Let the ratatouille simmer for an additional 5 minutes to absorb flavors.
- 12. Garnish with fresh basil leaves before serving warm.
