- 240G Salmon Fillets With Lemon & Pepper Butter
- 3 Per Pack Wholegood Organic Unwaxed Lemons
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 1 Kg Tomatoes 1kg
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 50G Picard Chopped Flat Parsley
- - Truffle Butter
- 100 G Jumbo Garlic 100g
- 1 Bunch Fresh Dill (Bunch)
- - Tata Salt
Instructions
- 1. Preheat your oven to 425°F (220°C).
- 2. Pat dry 1 1/2 lb of salmon fillet. Ensure it is cleaned and opened for stuffing.
- 3. Squeeze the juice of 1/2 lemon into the cavity of the salmon and place it on a buttered piece of foil.
- 4. Fill the salmon cavity with slices from 1/2 onion and 1 tomato.
- 5. Season the salmon with 1/4 tsp salt, 1/4 tsp pepper, 1/4 tsp dill, and 1/4 cup chopped parsley. Wrap the foil securely around the salmon.
- 6. Bake the wrapped salmon in the preheated oven for 25 to 30 minutes, until the fish is cooked through and flakes easily with a fork.
- 7. While the salmon bakes, melt 1 tbsp butter in a skillet over medium heat.
- 8. Add 1 minced clove of garlic and 1 diced tomato to the skillet. Sauté for 3-4 minutes until softened and fragrant.
- 9. Once the salmon is done, carefully unwrap it and transfer it to a serving dish. Spoon any juices from the foil over the fish.
- 10. Serve the salmon with the sautéed tomato-garlic mixture on the side and garnish with additional lemon slices if desired.
