  • 1 Kg Tomatoes 1kg
  • 60G Terre Exotique Cheeselovers Pepper, 60G
  • 50G Picard Chopped Flat Parsley
  • - Truffle Butter
  • 100 G Jumbo Garlic 100g
  • 1 Bunch Fresh Dill (Bunch)
  • - Tata Salt

Instructions

  1. 1. Preheat your oven to 425°F (220°C).
  2. 2. Pat dry 1 1/2 lb of salmon fillet. Ensure it is cleaned and opened for stuffing.
  3. 3. Squeeze the juice of 1/2 lemon into the cavity of the salmon and place it on a buttered piece of foil.
  4. 4. Fill the salmon cavity with slices from 1/2 onion and 1 tomato.
  5. 5. Season the salmon with 1/4 tsp salt, 1/4 tsp pepper, 1/4 tsp dill, and 1/4 cup chopped parsley. Wrap the foil securely around the salmon.
  6. 6. Bake the wrapped salmon in the preheated oven for 25 to 30 minutes, until the fish is cooked through and flakes easily with a fork.
  7. 7. While the salmon bakes, melt 1 tbsp butter in a skillet over medium heat.
  8. 8. Add 1 minced clove of garlic and 1 diced tomato to the skillet. Sauté for 3-4 minutes until softened and fragrant.
  9. 9. Once the salmon is done, carefully unwrap it and transfer it to a serving dish. Spoon any juices from the foil over the fish.
  10. 10. Serve the salmon with the sautéed tomato-garlic mixture on the side and garnish with additional lemon slices if desired.
